If I had to guess, I'd say Noah's always been like this, but it simply hasn't come to light since all of his recent stress.

It strikes me as fairly likely that Noah is exceedingly depressed, and frankly, it's hard to react normally if you're exceedingly depressed.

I think it might be because Noah is socially inept not due to depression though he may have that as well. He is trying to fake either Gaston's or Hevel's personality because he wants to be more likeable but it fails as he doesn't understand it. For example he wasn't trying to be sarcastic last comic when he said good for you, he thought that was what Gaston wanted to hear as Gaston complements other people quite often and obsessively tries to be the best but instead it came off rude. This comic he forced himself to smile and complement Gaston for his kindness because he realized he came off rude the first time he tried. You can see him very carefully choose his words and actions. He started off with his normal facial expression and saying that's (possibly "That's nice" considering how often he comes off rude) but instead decided to take on Hevel's personality using things like geez and slightly strange phrasing with a smile.
